Minyak kelapa dara bermaksud, minyak yang dikeluarkan dari buah kelapa cukup matang melalui proses khas dengan tidak merosakkan struktur asal atau khasiat semulajadi minyak kelapa yang terdapat di dalam buah kelapa. Pakar-pakar merumuskan bahawa suatu kandungan yang terdapat dalam buah kelapa yang dipanggil asid lemak tepu dapat memberi pelbagai kesan positif keatas kesihatan manusia, sebab itulah penduduk kepulauan pasifik begitu sihat dan mempunyai kadar berat badan dan ketinggian begitu baik. Mereka juga didapati tidak mengalami penyakit kronik seperti jantung dan kanser.
Diproses secara semulajadi tanpa haba dan kimia lain. Terdapat sekurang-kurangnya 9 jenis asid lemak (Medium Chain Fatty Acids) iaitu caproic, caprylic, capric, lauric, myristic, palmitic, stearic, oleic dan linoleic. Kajian sains menunjukkan ianya amat berguna untuk kesihatan manusia.
